Grilled Mahi Mahi with Papaya Salsa

Ingredients
- 2 tbsp ancho chili powder
- 2 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 2 limes, juiced
- ¼ cup olive oil
- 4 Mahi-Mahi fillets, thawed
- 1 small papaya, peeled, seeded and diced
- 4 tomatillos, diced
- ½ cup diced fresh pineapple
- 2 tbsp fresh chopped cilantro
- ½ – 1 fresh jalapeño, thinly sliced
- 1 lime, juiced
- 2 tbsp extra virgin olive oil
Directions

Mix first six ingredients in a shallow dish. Add Mahi-Mahi and coat both sides evenly with mixture. Allow to marinate for at least twenty minutes but no more than one hour.

Mix remaining ingredients in a medium bowl, season with salt and pepper and reserve. On high heat, grill fish for about four minutes per side, plate, and serve with salsa.
