Grilled Mahi Mahi with Papaya Salsa

Ingredients

  • 2 tbsp ancho chili powder
  • 2 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 limes, juiced
  • ¼ cup olive oil
  • 4 Mahi-Mahi fillets, thawed
  • 1 small papaya, peeled, seeded and diced
  • 4 tomatillos, diced
  • ½ cup diced fresh pineapple
  • 2 tbsp fresh chopped cilantro
  • ½ – 1 fresh jalapeño, thinly sliced
  • 1 lime, juiced
  • 2 tbsp extra virgin olive oil

Directions

  1. Mix first six ingredients in a shallow dish. Add Mahi-Mahi and coat both sides evenly with mixture. Allow to marinate for at least twenty minutes but no more than one hour.
  2. Mix remaining ingredients in a medium bowl, season with salt and pepper and reserve. On high heat, grill fish for about four minutes per side, plate, and serve with salsa.
