In a large pot heat the olive oil over a medium heat and add the minced Shallots. After about 3 minutes lower the heat and add the garlic. Keep mixing around with shallots for about a minute. Next you will add the Hard Cider, Dill, Thyme, salt, pepper. Cover the pot and let simmer for 5 minutes.
Add the mussels, and raise back to a medium heat. Cover the pot and cook for 5 minutes.
Lower the heat back down to a simmer and add the butter, Cream, and mustarded. Simmer for another few minutes.
Remove from pot and put in a deep bowl garnish with more fresh dill
